·将控好水的菜点放在小锅仔里面,垫下的点。放好以后,准备点火锅底料,切上那么一点,切成那小片,再拍上几瓣蒜,一定要用拍蒜,拍蒜比较出味。
·然后起锅烧油,这时候放入点花椒粒,再放点料油,放入郫县豆瓣酱,煸炒几下,炒出香味。然后放入葱花、蒜片,再煸炒几下,放入切好好的火锅底料,多搅动几下,将其融化。
·这时候放点东谷,一品鲜酱油,放在锅边,淋出来香味。然后锅中加入几勺子的清水,水加好以后调味,味精、鸡粉、胡椒粉,放在锅里面,再搅动几下,别让它起了疙瘩。

·放好以后,放回放回火上面,一定不要动它,先慢慢的让它升温,烧开以后,慢慢的动,肉片马上就熟了,搅动几下,将沾点的肉片分开。这时候弄好了,把它装在盛好菜籽的锅仔里面。
·装好以后,并刷锅,再放入食用油,准备葱花、蒜末和干辣椒段。这时候等油温稍微上来了,就先放入辣椒段,在里面微微的,在油里面微微的变点颜色了,把这葱花、蒜末一块放里面爆香,然后浇在弄好的肉片上面。

现在这个季节,火锅已经开始变成了食客们的宠儿,没有什么事儿是一顿火锅解决不了的,如果有,那就两顿火锅!每次吃火锅,虾滑、肉滑之类的都是必点菜,那么今天小易就来分享家常版肉滑的做法,简单一碗汤就能让你满足的美味!
所需食材:
前夹肉、清水、生姜、大葱、胡椒粉、鸡汁、盐、玉米淀粉、青菜、香葱、虾皮、香油、鸡粉、花雕酒、食用油
*** 步骤:
之一步:准备一块前夹肉,把里面的筋膜去掉,再切成小块,然后放入绞肉机中充分搅碎,搅成细腻的肉泥,倒入小碗中备用。
第二步:碗中准备少许清水,再加入姜片和葱片,然后下手把葱姜里面的汁水捏出来,做一碗葱姜水备用。
第三步:肉泥中加入适量葱姜水去腥,再加入少许胡椒粉、鸡汁和盐调味;接着打入一个鸡蛋,顺着一个方向充分搅拌均匀,可以多搅打一会儿,让肉泥上劲;最后往肉泥中加入少许玉米淀粉,充分搅拌均匀,此时的肉泥已经非常细腻了,而且放在手心不会往下掉。
第四步:准备一个比较平的盘子,然后把肉泥放进来,并用筷子抹平,更好静置5分钟。
第五步:少许香菜和青葱都切成末,放入大碗中,再加入少许虾皮和香油增香,然后加入少许鸡粉和食用盐调味。
第六步:锅中加入清水,再加入少许的花雕酒,大火烧开之后转中小火;准备一个小勺子,在勺子上抹上少许食用油,然后用勺子把准备好的肉泥化进锅里;待肉泥全部下锅后,大火烧开,并打去表面的浮沫,继续把锅中的肉滑煮熟。
第七步:往装有香菜等小料的大碗中舀入适量汤汁,把底料冲开并搅拌均匀;然后把煮熟的肉滑盛进来,美味即成!
*** 关键点:
1.在食材的选择上,前夹肉的肥瘦比例更好是2:8。
