今天给大家分享一道美味的口蘑料理。
近来雨水颇多,湿气较重,让人感觉浑身都黏黏糊糊的,非常不舒服。不过,这种天气,却是进山“拣菌子”的好时节。为什么用“拣”,不用“采”?一个“拣”字形象地说明了非常容易找到,几乎“遍地都是”。每天一打开网页,各种进山采蘑菇的视频纷纷映入眼帘,每一个都忍不住点开进去,一边看一边想象着美味,忍不住口水横流。
生在都市中,自然感受不到这样的野趣,只能买上一些蘑菇吃吃,用来慰藉自己,毕竟聊胜于无嘛!
所有市场可见的食用菌中,与野生菌最相似的,当属口蘑。不论是外形还是味道,相似度都比较高。虽然鲜味可能差上一些,但是起码安全可靠,不会有中毒的风险。
由于菌类的氨基酸的含量都很高,所以本身就自带“鲜味”。那么就不用使用过多的调料以及过于繁复的烹调手法,简简单单炒一下,味道就相当不错。
下面就采用有海鲜味的蚝油,作为主调料去烹调口蘑,非常简单的家常做法分享给大家,喜欢就收藏起来或者直接关注我吧!
【蚝油烩口蘑】
所需材料:口蘑,香葱,食用油,生姜,胡椒粉,淀粉,食盐
*** *** 如下:
1.首先准备适量的口蘑以及几根香葱。
2.先仔细把口蘑清洗干净,然后根据口蘑的大小切成合适的小块;香葱摘洗干净后切成葱花;准备一小块生姜,切成姜丝。
3.准备一只炒锅,锅中倒入适量的食用油,等油温升高以后,倒入切好的口蘑,迅速地翻炒均匀,避免局部炒糊。
4.将火转小,然后往锅中加入适量的蚝油。(蚝油可以稍微多加一点)
5.先将蚝油炒均匀,再加入适量的清水以及一些胡椒粉。然后盖上盖子,将汤汁烧干。
6.等锅中汤汁快要烧干的时候,加入适量的食盐调味,再把香葱也倒入锅中。
7.用适量的淀粉加清水调成水淀粉,然后趁热倒入锅中,勾出薄芡。
8.最后把烧好的口蘑盛出装盘,可以再撒上一些葱花点缀。
一道美味的蚝油烩口蘑就做好了!由于蚝油和口蘑本身都自带鲜味,所以更好不要再放提鲜的调料了。

豆腐皮拌杏鲍菇
【准备食材】
豆腐皮、杏鲍菇、葱、蒜、小米辣
【准备调味品】
酱油、蚝油、糖、醋、胡椒粉、盐

1、豆腐皮切成宽条,凉水下锅焯水,放少量的盐可以增加筋性不易断。
2、杏鲍菇切成薄片,上锅蒸熟。

4、豆腐皮捞出控水,将蒸好的杏鲍菇撕成条,与豆腐皮放到一起,浇上自制的拌料,这道美味又营养的凉拌豆腐皮杏鲍菇就做了,酸辣爽口,杏鲍菇跟豆腐皮吃起来都有一种肉感,堪称素肉,大家赶紧试试吧。
黄瓜丝拌白玉菇
【准备食材】
白玉菇、黄瓜、蒜、芝麻、葱、青椒、辣椒面、
【准备调味品】
酱油、蚝油、醋、盐、糖

1、黄瓜洗净切丝。直接入口的鲜菜鲜果一定要用专门去除蔬果农药的洗涤用品泡一下,这样更健康卫生。
2、白玉菇清洗干净,撕成条焯水。
3、将焯过水的白玉菇去除多余水分,跟黄瓜丝放在一起,放入凉拌酱汁拌匀即可。凉拌酱汁的做法是葱、姜、蒜、青椒切末,放入辣椒面或者小米辣,调入酱油、蚝油、糖、醋、盐,浇入滚油即可,一次可以多做一些,做其他凉拌菜或者煮面都可以放入,具体可以参考我之前的发文。
凉拌料的放入量可以根据自己的口味来定,凉拌菜拌匀后需要尽快食用,防止黄瓜丝脱水!

1、不管什么种类的蘑菇,在吃之前一定要焯水,尤其是凉拌吃法,蘑菇一定要保证成熟在入口。
