33度高温,在家自制奶油冰淇淋,丝滑细腻,入口即化,做法很简单大家好,我是厨易,分享一学就会的厨房美食,欢迎交流,互相增进。
天气越来越热,怎可少了夏季更受欢迎的解暑甜品,奶油冰淇淋。买的话比较贵,吃着也不过瘾,不妨自己做,想吃多少做多少,下面我们就一起来看看如何 *** 的吧。
所需食材:3个鸡蛋、白糖、白醋
之一步:把3个鸡蛋的蛋黄分离出来,如果有无菌蛋更好
第二步:蛋黄碗里加入20克白糖,搅均匀。再加入15毫升清水,继续搅匀。滴入两滴白醋或者柠檬汁去腥
第三步:把蛋黄液放到锅里最小火加热,不停的搅拌,搅拌成比较细腻的状态。然后放到冷水里面隔水降温。
第四步:碗中倒入200克淡奶油,加入约20克白糖打发,打发定型,拎起打蛋器有尖角就行
第五步:挖一半淡奶油放到已经放凉的蛋黄碗里,翻拌均匀。拌匀之后全部倒入剩余的淡奶油碗中,继续拌均
第六步:倒入无水无油的容器里面,震动几下,盖上盖子冷冻4个小时就可以开吃了
*** 关键点:
1、蛋黄液的加热,一定要最小火不停的搅拌,不要把蛋液加热成蛋花了
2、打发淡奶油的时候,先低速打发出泡泡,再高速打发至定型起尖角
3、蛋黄液冷却后和打发好的淡奶油混合,不能使劲搅拌,只能慢慢的、轻轻的翻拌均匀
今天的奶油冰淇淋就做好了,口感口味不比买的差,入口即化,丝滑无比,是夏季解暑的必备品之一。家里有孩子的可以做给孩子吃,解解馋,小孩子们别提有多开心了。大家可以一次性多做一些,放在冰箱里面慢慢吃。

前几期,跟大家分享过两种酱:焦糖海盐酱,杨梅果酱,太适合用来做冰淇淋了~
天气越来越热了,冰淇淋必须安排上,一起实现在家冰淇淋自由~
之一款,焦糖海盐冰淇淋,简直香到爆炸,太妃糖的风味,一口上头,回味悠长,冰冰凉凉,入口即化,焦香的甜味带着微微的咸,超美味的,我更爱的冰淇淋口味之一!
第二款,杨梅冰淇淋,酸酸甜甜,说的就是你了~
杨梅果酱做的冰淇淋,颜色 *** *** 的,颜值也太高了吧!酸酸甜甜的口感,中和了淡奶油的浓郁奶香,布满的果肉,细细品尝,每一 *** 汁,太适合夏天了吧~
焦糖海盐冰淇淋会用到冰淇淋机 *** ,很细腻顺滑,无冰沙,如果没有冰淇淋机,下文也会跟大家分享,手动 *** 冰淇淋怎么可以做出顺滑细腻的口感。
杨梅冰淇淋,做法就更简单了,相对更低脂。
两款冰淇淋都非常好吃,赶紧看看怎么做的吧!
· *** 材料 ·
焦糖海盐冰淇淋:
蛋黄2个 焦糖酱100克
全脂牛奶200克
动物性淡奶油200克
杨梅冰淇淋:
杨梅果酱80克
浓稠酸奶100克
动物性淡奶油250克
(焦糖海盐酱,杨梅果酱, *** 可以翻看我前几天发布的文章)

焦糖海盐冰淇淋
1,蛋黄用电动打蛋器打发至颜色发白,体积蓬松,浓稠的状态。
(蛋黄的作用是稳定乳化,蛋黄中含有卵磷脂,是非常有效的天然乳化剂,尽量使用新鲜的鸡蛋)
2,牛奶和焦糖海盐酱倒入小奶锅,一边小火加热,一边用耐高温刮刀搅拌均匀
熬煮至微微沸腾的状态就可以离火了
3,电动打蛋器一边打发蛋黄,一边缓慢倒入焦糖牛奶
倒回小奶锅中,小火加热,不停搅拌
熬煮至80多度左右就可以离火了,注意:不要加热过度,蛋黄会凝固成蛋花汤的
4,蛋奶酱过筛一遍,去掉少量结块的蛋黄
倒入淡奶油,搅拌均匀(用冰淇淋机,不需要打发淡奶油,后面有介绍不用冰淇淋机的操作)
隔着冰水,完全冷却
5,倒入冰淇淋机,设置45分钟
这个时间,做出来的冰淇淋是比较软的质感。
可以按照个人喜欢冰淇淋的状态,设置时间。
装入小模具里面,冷冻2小时以后再品尝。
没有冰淇淋机, *** 的小贴士
如果没有冰淇淋机,可将淡奶油打发至7分发后,和完全放凉的海盐焦糖蛋奶糊翻拌均匀,再送入冰箱冷冻至快要凝固,取出用电动打蛋器充分搅打,再放回冷冻室继续冷冻。
想要更加细腻顺滑无冰渣的口感,可以每隔半小时重复1次用电动打蛋器搅打的步骤,重复3-4次后,冰淇淋液就会呈现非常滑润的状态。
杨梅冰淇淋
1,杨梅果酱和浓稠酸奶搅拌均匀
2,淡奶油用电动打蛋器,搅打至7/8成发
再分两次加入杨梅酸奶,翻拌均匀
3,装入容器,放入冰箱,冷冻变硬
冻硬以后,取出室温回温10分钟左右就很容易挖球啦~
