少年时的锅盔。擀开面,揉进油酥,擦一层猪肉,涂葱花。二十岁的时候,在合肥。
它立在两棵泡桐树下,火鎏金招牌,鹦哥绿玻璃,转转门把才开始洋气起来的合肥人像刨花一样刨来刨去。
二十年前,老板还年轻,他把锅盔摊子支在大酒店的侧边,生意不好不坏,案板上干干净净,偶尔有嗑碎的油碴子,竟然都显得新簇簇的。
我少年时见过他打锅盔。

老板打锅盔的技艺没啥子特别,但他那双手特别好看。少年的我看着他指头尖换指头肚地掌着两三个,甚至四五个锅盔,让它们在滚油里挪移换位。——由于温度过高,手指在上头微妙地弹跳,碰一碰,又离开,几指轮换,像抚一扇琴。
趁滚烫吃,喀嚓,是令人愉悦的酥脆,肉似有若无地藏在面层中,成为一道吝啬的线索,而且他并不大方,花椒面也放得少,不如库房街那家香。
他做了几十万只锅盔。
他看着大酒店迎来送往,看着它金字招牌慢慢褪色,直到鹦哥绿玻璃蒙上擦不净的雾。他觉得自己也跟着慢慢褪色了。
