虽然已经过了立秋,可气温居高不下,这么热的天,真是做饭没动力,吃饭没胃口。试试甜酒酿馒头吧,吃进嘴里蓬松柔软,加上甜酒酿独有的味道,让馒头更增添了一缕似有似无的香气,淡淡的酒香更是让人口齿留香。

所需食材:

甜酒酿1碗、酵母5克、普通面粉640克、玉米油15克

*** 步骤:

之一步:把酒酿(约340克)放入料理机打碎后倒入大碗中,加入5克的酵母搅开。分次倒入640克面粉,搅拌成大絮状后,再下手充分搅匀至无干粉状,最后加入15克玉米油,再次揉面,并充分揉匀

第二步:把面团移到案板上,充分揉光滑后,放入碗中,盖上盖子醒发至两倍大(这种天气气温高,用了半个小时,如果气温低,可以适当延长醒发时间)

第三步:取出醒发好的面团,充分揉匀排气(边撒面粉边揉面团),然后从中间抠一个洞,把面团搓成条状后揪剂子,每个剂子约90克,可根据个人喜好调整

第四步:揪好的小剂子,边揉边转,边往前推,力度尽量大一些,这样更容易揉光滑。(这里每个剂子大约揉了60-70下,如果揉面的力度不是很大,可能要揉100下或者更多)

第五步:笼布打湿放上馒头,馒头之间的距离尽量大些,二次醒发至馒头体积变大后(醒发到手指按压皮子轻松回弹就可以了),开火,然后上气蒸20分钟,关火后再焖5分钟,白白胖胖的甜酒酿馒头就做好了!

*** 关键点:

1.搓揉馒头剂子的时候,尽量用力多搓揉几次,这样蒸出来的馒头才会回弹如初。

2.揪馒头剂子的时候,尽量整的高一些,二次醒发好会塌下来

3.馒头剂子放入蒸笼后,每个馒头之间一定要多空出一些距离,不然二次发酵后,馒头会粘连在一起

另外发酵时可以用白糖和无铝泡打粉辅助,来使发酵更彻底,馒头更香甜虚软。具体的配方如下:中筋面粉500g,酵母粉5克,无铝泡打粉2.5克,白糖15克,植物油3克,冷水270ml。用这个比例和面发酵,蒸出来的馒头非常虚软香甜。

发酵的程度需要把握好,面团体积膨胀1倍,用手指按压发酵好的面团可以迅速回弹,用手拍打有清脆回响,说明发酵完成。值得注意的是,馒头胚做好以后,还需要一个2次醒面的过程,通常是馒头胚温水上锅,盖上锅盖醒面15分钟再开火蒸,馒头更虚软。

蒸馒头的时间以水开后开始计算,一般蒸20-25分钟即可。馒头蒸好后不要着急开锅,关火后焖上5分钟防止馒头皮有褶皱,如此馒头就蒸好了。少许泡打粉和面可以使馒头更香软,白糖有加速发酵的作用,还能使馒头回味甘甜,略带嚼头。
